Merry Christmas y’all, from gotinterfacing.com staff In Mt Airy, NC! Christmas is so special to me for many reasons...it’s my birthday for openers! I can’t imagine spending Christmas in the hospital but that’s where my life began 74 yrs ago this Christmas! What a special gift my mom received that year! Lol! I’m so thankful for all the years God has blessed me with, especially since 26 yrs ago I was diagnosed with a smokers cancer...and I’ve never smoked! Prognosis was not good, with an unknown primary site. But here I am at 74 and no further cancer! Oh how thankful I am! Haven’t eaten — plus I’ve had a trach all these years! But I’ve been totally blessed with 7 grandchildren, cancer free, successful small business!

Christmas is special in a more important way. It’s the day we are given to celebrate the birth of our Lord and Savior. Christmas season opens hearts and eyes to needs, to love, to special feelings for one another. It’s a time we open our hearts to follow the tradition of giving. This year has been especially tough for so many...from isolation issues to financial...it’s been devastating to so many. I’m so thankful for God’s provisions.

COUNTRY BREAKFAST CASSEROLE
This tasty, golden brown casserole can be ready in less than one hour or you can make it the night before, chill and bake it in the morning. Choose lower fat cheese, milk and sausage for a lighter, yet still tasty version.

- 8INGREDIENTS
INGREDIENTS
- 1 roll (12 ounces) breakfast sausage
- 2 cups shredded Cheddar cheese
- 6 eggs, beaten
- 1 cup water
- 1/2 cup milk
- 1 package McCormick® Original Country Gravy Mix Substitutions available
- 6 slices bread, cut into 1-inch cubes
- McCormick® Paprika
INSTRUCTIONS
- Preheat oven to 325°F. Cook crumbled sausage in large skillet on medium heat until brown, stirring occasionally. Drain sausage. Spread in lightly greased 11x7-inch baking dish. Sprinkle cheese over sausage.
- Beat eggs, water, milk and Gravy Mix in medium bowl with wire whisk until well blended. Pour over cheese. Arrange bread cubes evenly over mixture. Drizzle butter over bread, if desired. Sprinkle with paprika.
- Bake, uncovered, 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
